Ingredients

Instructions

1. Roast the Cherry Tomatoes

  2. Add cherry tomatoes to a tray and drizzle with olive oil.

  4. Roast 10–12 minutes until blistered and juicy.
  5. Let them cool slightly.

2. Boil the Eggs (Soft & Jammy)

  1. Bring a pot of water to a boil.
  2. Add eggs and boil for exactly 6½ minutes.
  3. Transfer immediately to an ice bath.
  4. Peel gently and slice.

3. Prepare the Base

  1. In a large shallow bowl, add mixed greens.
  2. Drizzle with a little olive oil and lemon juice.
