Ingredients

For the Salad Base

  • 1 cup cooked wild rice or brown rice
  • 1 cup steamed broccoli florets
  • ½ cup roasted chickpeas

  • 1–2 soft-boiled eggs, halved

Instructions

  2. Fluff and allow it to cool slightly.

3. Steam the Broccoli

  1. Steam florets for 3–4 minutes until bright green and tender-crisp.

4. Soft-Boil the Eggs

  1. Bring water to a boil.
  2. Lower eggs gently and cook 7 minutes for a jammy yolk.
  3. Cool in cold water, peel, slice.

5. Make the Dressing

  1. Whisk olive oil, lemon juice, Dijon, oregano, salt and pepper.

6. Assemble the Salad

  1. Add greens to the bowl.
  2. Arrange broccoli, rice, chickpeas, feta, olives, and eggs.
  3. Drizzle with dressing and serve fresh.
