Ingredients
For the Plate
- 1 slice brioche or sourdough toast
- 1 ripe persimmon, thinly sliced
- 1–2 tbsp chopped almonds
- ½ avocado (for avocado rose)
- 1 egg (for sunny-side-up)
- 5–6 fresh strawberries, sliced
- ¼ cup blueberries
- 1–2 slices spam (or paneer/tofu alternative)

Instructions
1. Prepare the Toast
Toast the bread lightly in a pan or toaster. Arrange thin persimmon slices on top. Sprinkle chopped almonds.
2. Make the Avocado Rose
Slice avocado thinly, spread slices out in a long line, then roll tightly to form a rose.
3. Cook the Egg
Heat butter in a nonstick pan. Crack the egg gently and cook until whites set and yolk remains runny.
4. Pan-Sear the Spam
Cook spam slices on medium heat for 2–3 minutes per side until golden.
