Chicken-Broccoli-Stir-Fry-With-Bell-Peppers

Ingredients (Serves 3–4)

For the Stir-Fry

  • 500g chicken breast, thinly sliced
  • 1 tbsp oil (vegetable, avocado, or sesame)
  • 2 cups broccoli florets
  • 1 red bell pepper, sliced
  • 1 yellow bell pepper, sliced
  • 1 small onion, sliced
  • 3–4 garlic cloves, minced
  • ½ inch ginger, grated

For the Sauce

  • 3 tbsp soy sauce
  • 1 tbsp oyster sauce (optional but recommended)
  • 1 tbsp honey or brown sugar
  • 1 tbsp rice vinegar or lemon juice
  • ½ tsp chili flakes or 1 tbsp chili sauce (adjust heat)
  • ½ cup chicken broth or water
  • 1 tsp cornstarch mixed with 1 tbsp water (slurry)

Optional Garnish

  • Sesame seeds
  • Spring onions
  • Lime wedge

Method

1. Prepare the Chicken

Slice chicken breasts thinly so they cook quickly and evenly. Pat dry and season lightly with salt. Heating a wok or large skillet over medium-high heat, add oil and sauté chicken for 4–5 minutes until lightly browned and cooked through. Remove and set aside.

2. Stir-Fry the Vegetables

In the same pan, add a splash of oil if needed. Add garlic and ginger and sauté for 20–30 seconds until fragrant. Add onions, bell peppers, and broccoli. Stir-fry for 3–4 minutes on high heat until broccoli is bright green and the vegetables are slightly tender but still crisp.

3. Make the Stir-Fry Sauce

In a bowl, whisk soy sauce, oyster sauce, honey, chili flakes, vinegar, and chicken broth.
Stir in the cornstarch slurry last.

4. Combine Everything

Return the cooked chicken to the pan. Pour in the prepared sauce. Stir quickly so the sauce thickens and clings to the chicken and vegetables. Cook for 2–3 minutes until glossy and well-coated. Adjust seasoning:

  • Add more soy sauce → stronger savory flavor
  • Add more honey → more sweetness
  • Add more chili → more heat

5. Serve Hot

Transfer your stir-fry to a serving bowl or skillet. Garnish with sesame seeds and spring onions for freshness. Serve with steamed rice, noodles, or enjoy it as a low-carb meal on its own.

Chef’s Tips for Perfect Stir-Fry

✔ Slice everything evenly

Thin, uniform slices cook quickly and prevent overcooking.

✔ Cook on high heat

Stir-frying is fast. High heat keeps veggies crisp and chicken juicy.

✔ Don’t overcrowd the pan

Crowding lowers the heat and makes the chicken watery instead of browned.

✔ Sauce too thick?

Add 1–2 tbsp water.
Too thin? Add a touch more slurry.

✔ Add depth

A splash of sesame oil at the end adds amazing aroma.
