Ingredients (Serves 1–2)
For the Mushroom Toast
- 1 thick slice sourdough or multigrain bread
- 1 cup sliced mushrooms (button or cremini)
- 1 tbsp butter or olive oil
- 1 clove garlic, minced
- Salt & black pepper
- 1 tbsp chopped parsley
For the Boiled Eggs
- 2–3 large eggs
- Pinch of salt
- Red pepper flakes for topping
For the Avocado
- ½ ripe avocado, sliced
- Pinch of salt
- Red pepper flakes
For the Sautéed Spinach
- 1–1½ cups fresh spinach
- 1 tsp olive oil
- 1 small garlic clove, finely chopped
- Pinch of salt
Method
1. Prepare the Boiled Eggs
Place eggs in a pot and cover with cold water. Add a pinch of salt.
Bring to a boil, then reduce heat and simmer for 7–8 minutes for jammy centers (like your image).
Transfer eggs to cold water, peel, and slice in half.
2. Make the Mushroom Toast
Heat butter or oil in a pan over medium heat.
Add mushrooms and sauté until they release moisture and turn golden—about 5–6 minutes.
Add garlic, salt, and pepper, and cook 1 more minute.
Toast your sourdough slice until crisp, then spoon the mushrooms on top.
Finish with chopped parsley.
3. Sauté the Spinach
In the same pan, add a little more oil if needed.
Add garlic and sauté for 10–15 seconds.
Add spinach, salt, and cook until wilted—just 1–2 minutes.
Remove before it turns too dark to keep the fresh color.
4. Prepare the Avocado
Slice the avocado and sprinkle with salt and pepper flakes.
5. Assemble the Plate
Place the mushroom toast on one side, eggs at the top, avocado slices on the right, and sautéed spinach at the bottom.
Sprinkle a few chili flakes over the eggs and avocado for flavor and presentation.
