Ingredients
For the Shredded Beef:
- 500 g (1 lb) beef chuck or brisket
- 1 tbsp olive oil
- 1 small onion, chopped
- 2 garlic cloves, minced
- 1 cup beef broth
- 2 tbsp tomato paste
- 1 tsp cumin powder
- 1 tsp smoked paprika
- ½ tsp chili powder
- Salt and pepper to taste
For the Bowl Base:
- 1 cup cooked white or brown rice
- ½ cup cooked black beans
- Fresh lettuce leaves (optional base layer)
For the Toppings:
- ½ cup guacamole
- ¼ cup sour cream
- ¼ cup shredded cheddar cheese
- ½ cup pico de gallo (fresh salsa made with tomato, onion, cilantro, lime, and salt)
- Fresh lime wedges for garnish
Method
Step 1: Prepare the Shredded Beef
Heat olive oil in a pot over medium heat. Add chopped onion and garlic, sauté until golden. Add beef, searing it on all sides until browned.
Add tomato paste, spices, salt, and pepper. Pour in beef broth, cover, and simmer for 2–2½ hours (or pressure cook for 45 minutes) until the meat is tender. Shred with forks and let it soak in the sauce.
Step 2: Cook the Rice & Beans
Prepare rice according to package instructions. Warm black beans with a pinch of salt and cumin for added flavor.
Step 3: Make the Toppings
- Guacamole: Mash ripe avocado with lime juice, salt, and a touch of chili flakes.
- Pico de Gallo: Mix diced tomatoes, onions, cilantro, lime juice, and salt.
- Sour Cream & Cheese: Keep chilled until assembly.
Step 4: Assemble the Bowl
In a large bowl, add a base layer of rice and lettuce. Arrange sections of black beans, shredded beef, guacamole, pico de gallo, shredded cheese, and sour cream on top. Garnish with lime wedges and a sprinkle of chili flakes for extra heat.
