For the Salmon
- 2 salmon fillets (150–180g each)

Method
1. Prepare the Potatoes
Preheat your oven to 200°C (400°F). Wash the baby potatoes and pat them dry. Toss them with olive oil, rosemary, thyme, salt, and pepper. Spread them evenly on a baking tray and roast for 25–30 minutes, shaking the tray halfway until the potatoes are crisp, browned, and fork-tender.
2. Make the Herb Butter
In a small bowl, combine softened butter with grated garlic, parsley, lemon zest, and a pinch of salt. Mix until smooth. Keep the mixture refrigerated until ready to use.
3. Cook the Salmon
Season both sides of the salmon fillets with salt, pepper, garlic powder, and lemon juice. Heat olive oil in a non-stick pan over medium-high heat. Place the salmon skin-side down and cook for 3–4 minutes until the skin becomes crispy. Flip and cook the other side for 2–3 minutes until golden and flaky.
