Ingredients
For the Spicy Salmon
- 250–300g salmon, cut into chunks
- 1 tbsp olive oil
- 1 tsp paprika
- ½ tsp garlic powder
- ½ tsp black pepper
- ½ tsp chili flakes (optional)
- Salt, to taste
For the Crispy Chickpeas
- 1 cup cooked or canned chickpeas
- 1 tbsp olive oil
- ½ tsp paprika
- ¼ tsp cumin
- Salt & pepper
For the Salad Base
- 2 cups mixed greens (arugula/spinach)
- 1 avocado, cubed
- 8–10 cherry tomatoes, halved
- 2 soft-boiled eggs
For the Dressing
- 1 tbsp olive oil
- 1 tsp Dijon mustard
- 1 tsp lemon juice
- ½ tsp honey
- Salt & pepper
Instructions
1. Prepare the Crispy Chickpeas
- Preheat the oven to 220°C (425°F).
- Toss chickpeas with oil, paprika, cumin, salt, and pepper.
- Spread on a baking sheet and roast 18–22 minutes until crisp.
2. Cook the Salmon
- In a bowl, coat salmon pieces with olive oil, paprika, garlic powder, chili flakes, salt, and pepper.
- Heat a non-stick pan on medium-high.
- Cook salmon for 3–4 minutes per side, until golden and cooked through.
3. Make Soft-Boiled Eggs
- Bring water to a gentle boil.
- Lower eggs into water and cook 6½ minutes for soft, jammy yolks.
- Transfer immediately to ice water; peel and halve.
4. Assemble the Salad
- Spread greens in a large bowl.
- Add avocado cubes, cherry tomatoes, crispy chickpeas, and salmon pieces.
- Place soft-boiled egg halves on top.
- Drizzle with dressing before serving.
