Ingredients

Beef Filling

  • 1 tsp ground cumin
  • 1 tsp smoked paprika
  • ½ tsp dried oregano
  • ½ tsp cayenne pepper (optional)
  • Salt and black pepper, to taste
  • 3 tbsp tomato paste
  • ¼ cup beef stock or water

Burrito Components

  • 4 large flour tortillas (10–12 inch)
  • 2 cups shredded cheddar or Mexican cheese blend
  • 1½ cups shredded iceberg or romaine lettuce
  • 1 cup fresh pico de gallo or diced tomatoes
  • 1 cup cooked rice (white or cilantro-lime rice)

Guacamole

  • 2 ripe avocados
  • 1 tbsp lime juice
  • Salt, to taste
  • 1 tbsp finely chopped cilantro (optional)

Toppings

  • ½ cup sour cream
  • Extra guacamole (for serving)
  • Fresh cilantro (optional)

Instructions

1. Cook the Beef Filling

Heat olive oil in a skillet over medium heat.
Add onion and sauté until soft and translucent, about 3–4 minutes.
Add garlic and cook for 30 seconds until fragrant.

Add ground beef and cook until browned, breaking it apart evenly.
Drain excess fat if necessary.

Stir in chili powder, cumin, paprika, oregano, cayenne, salt, and pepper.
Add tomato paste and beef stock. Simmer for 5–7 minutes until thick and flavorful. Remove from heat.


2. Prepare the Guacamole

Mash avocados in a bowl.
Add lime juice, salt, and cilantro.
Mix until creamy with slight texture. Set aside.


3. Warm the Tortillas

Warm tortillas on a dry skillet or microwave until soft and pliable.


4. Assemble the Burritos

Place a tortilla flat and layer in the center:

  2. Seasoned beef
  3. Shredded cheese
  4. Lettuce
  5. Pico de gallo
  6. Guacamole
  7. Sour cream

Fold sides inward and roll tightly into a burrito.
