Ingredients

  • 1 cup chopped tomatoes
  • ½ cup feta cubes
  • ¼ cup Kalamata olives
  • ¼ cup diced red onions
  • 2 tbsp hummus (roasted red pepper or classic)
  • 2–3 pepperoncini
  • 1½ cups mixed greens
  • 1 tbsp chopped parsley
  • Salt & pepper to taste
  • Lemon wedge for serving

Instructions

  1. Place mixed greens into a large bowl as the base.
  2. Add cucumbers, tomatoes, onions, olives, and pepperoncini in sections.
  3. Add the feta cubes and place falafel balls on one side.
  4. Add a generous spoonful of hummus in the center.
  5. Sprinkle parsley, season lightly, and drizzle lemon on top before eating.
