Ingredients

For the Spicy Salmon

  • 250–300g salmon, cut into chunks
  • 1 tbsp olive oil
  • 1 tsp paprika
  • ½ tsp garlic powder
  • ½ tsp black pepper
  • ½ tsp chili flakes (optional)
  • Salt, to taste

For the Crispy Chickpeas

  • 1 cup cooked or canned chickpeas
  • 1 tbsp olive oil
  • ½ tsp paprika
  • ¼ tsp cumin
  • Salt & pepper

For the Salad Base

  • 2 cups mixed greens (arugula/spinach)
  • 1 avocado, cubed
  • 8–10 cherry tomatoes, halved
  • 2 soft-boiled eggs

For the Dressing

  • 1 tbsp olive oil
  • 1 tsp Dijon mustard
  • 1 tsp lemon juice
  • ½ tsp honey
  • Salt & pepper

Instructions

1. Prepare the Crispy Chickpeas

  1. Preheat the oven to 220°C (425°F).
  2. Toss chickpeas with oil, paprika, cumin, salt, and pepper.
  3. Spread on a baking sheet and roast 18–22 minutes until crisp.

2. Cook the Salmon

  1. In a bowl, coat salmon pieces with olive oil, paprika, garlic powder, chili flakes, salt, and pepper.
  2. Heat a non-stick pan on medium-high.
  3. Cook salmon for 3–4 minutes per side, until golden and cooked through.

3. Make Soft-Boiled Eggs

  1. Bring water to a gentle boil.
  2. Lower eggs into water and cook 6½ minutes for soft, jammy yolks.
  3. Transfer immediately to ice water; peel and halve.

4. Assemble the Salad

  1. Spread greens in a large bowl.
  2. Add avocado cubes, cherry tomatoes, crispy chickpeas, and salmon pieces.
  3. Place soft-boiled egg halves on top.
  4. Drizzle with dressing before serving.
