Creamy-Mashed-Potatoes-with-Spiced-Chicken-Drumsticks

Ingredients (Serves 2)

For the Chicken Drumsticks

  • 4–6 chicken drumsticks
  • 1 tbsp olive oil
  • 1 tsp paprika
  • ½ tsp garlic powder
  • ½ tsp onion powder
  • ½ tsp black pepper
  • ½ tsp salt
  • ¼ tsp turmeric (optional, for color)
  • ½ tsp dried herbs (oregano or mixed herbs)

For the Mashed Potatoes

  • 3–4 medium potatoes, peeled and cubed
  • 2 tbsp butter
  • ¼ cup warm milk (add more as needed)
  • Salt, to taste
  • Black pepper, to taste
  • A pinch of paprika (for garnish)
  • Fresh dill or parsley, chopped (for garnish)

For the Creamy Cucumber Salad

  • 1 large cucumber, thinly sliced
  • 6–8 cherry tomatoes, halved
  • 2 tbsp yogurt or sour cream
  • ½ tbsp lemon juice
  • Salt, to taste
  • Black pepper, to taste
  • 1 tbsp fresh dill, chopped

Instructions

1. Prepare the Chicken

  1. Preheat oven to 200°C (400°F).
  2. Pat chicken drumsticks dry.
  3. In a bowl, mix olive oil, paprika, garlic powder, onion powder, turmeric, herbs, salt, and pepper.
  4. Coat the drumsticks evenly with the spice mixture.
  5. Place on a lined baking tray and roast for 30–35 minutes, flipping once halfway, until golden and cooked through.
  6. Let them rest for a few minutes before serving.

2. Make the Mashed Potatoes

  1. Boil the potato cubes in salted water until tender, about 12–15 minutes.
  2. Drain and return them to the pot.
  3. Add butter, warm milk, salt, and pepper.
  4. Mash until smooth, adjusting the milk for creaminess.
  5. Garnish with dill/parsley and a sprinkle of paprika.

3. Prepare the Cucumber Salad

  1. In a bowl, whisk together yogurt (or sour cream), lemon juice, salt, pepper, and dill.
  2. Add the cucumber slices and cherry tomatoes.
  3. Toss gently to coat.
  4. Chill for 5–10 minutes before serving for best flavor.

4. Assemble the Plate

  • Add a generous scoop of mashed potatoes.
  • Place two or three golden drumsticks beside it.
  • Add a fresh portion of creamy cucumber-tomato salad.
  • Finish with fresh herbs for color.

Chef’s Notes

  • Add crushed garlic to the mash for extra flavor.
  • Drumsticks can be air-fried at 190°C (375°F) for 20–25 minutes.
